Low fat chocolate ricotta cheesecake tart.

This low fat dessert recipe for cheesecake uses ricotta - a good protein provider for what is also an easy low fat dessert recipe, that everyone will love.

Preheat the oven to 180C, 350F, gas 4. Prepare an 18cm round loose-based flan tin.

Ingredients

35g white self-raising flour

40g wholemeal self-raising flour

2 tablespoons caster sugar

2 teaspoons sifted cocoa powder

30g low-fat margarine

2 teaspoons water

1 egg yolk

Ricotta filling ingredients

150g low-fat ricotta cheese

1 egg

1 egg yolk

70g low-fat plain yogurt

55g caster sugar

2 teaspoons white plain flour

2 tablespoons dark chocolate chips

2 teaspoons of coffee-flavoured liqueur.

Combine in a large mixing bowl the two types of self-raising flour, the sugar, sifted cocoa powder and low-fat margarine. Mix until even breadcrumbs are formed. Add the water and egg yolk, and mix until it forms a dough. Knead the dough for five minutes on a floured surface until smooth. Cover and refrigerate for 30mins to rest.

When ready, gently roll the dough and then cover and press over the prepared flan-tin. Cover the dough with baking paper, leaving an extra 5cm all the way round. Fill and cover with baking beans or rice.

Bake in the preheated oven for ten minutes. Take out the pastry from the oven and remove the paper and beans. Then bake for a further five minutes, or until the pastry is a light golden brown. Leave to cool.

To make the cheesecake ricotta filling.

With an electric mixer in a medium sized mixing bowl, mix the ricotta, the egg yolk and whole egg, yogurt, sugar and flour, until smooth. Then add the choc chips and liqueur, and mix through the mixture.

Pour into the cooled pastry case and fill evenly. Bake in the oven for 20 minutes.

Remove from the oven and cool. Chill before eating.

Serves 8.

A low fat chocolate cake is a great dessert recipe to eat without guilt.

                           Low fat chocolate fudge cake

Preheat the oven to 180C, 350F, gas 4. Prepare a 20cm round cake tin with baking paper; grease well.

Ingredients

85g dark chocolate, finely chopped

50g cocoa powder

200g brown sugar

125ml boiling water

2 egg yolks

30g almond meal

50g wholemeal plain flour

4 egg whites

Place the chocolate, cocoa powder and sugar with the boiling water in a large mixing bowl. Stir all the ingredients until smooth. Whisking, add the egg yolks, then fold the almond meal and flour in gently.

With an electric whisk, whisk up the egg whites until firm peaks form.

Gently, in two batches, fold the egg whites into the chocolate mixture.

Pour into the prepared round tin and bake for 40 minutes. Once cooked, remove from the oven and allow to cool before removing from the cake tin. Leave to cool further on a wire rack, then remove the paper.

Serves 8. Serve with low fat crème fraiche, or low fat whipped cream; lovely with summer fruits like strawberries and dusted with icing sugar.

Rich low fat dessert recipe for chocolate meringue cake.

Prepare the oven at a low setting, approx 120C, 250F, gas ½. Prepare a greased 22cm springform tin; line with baking paper.

Ingredients,

8 egg whites

220g caster sugar

60g dark low-fat chocolate, finely chopped

60g finely chopped glace figs

50g finely chopped seeded prunes

45g stale breadcrumbs

25g cocoa powder

(An extra tablespoon of icing sugar and cocoa powder will be required if desired.)

Beat egg whites in a medium bowl with an electric mixer until soft peaks form.

Add the sugar, one tablespoon at a time, beating until the sugar dissolves between each addition. Fold in the chocolate, fruit, breadcrumbs and sifted cocoa.

Spoon the mixture into the prepared tin and bake in the preheated oven for 1½ hours. Cool in the oven with the oven door ajar.

Serves 8. Dust with icing sugar and the extra cocoa powder as required. Serve with low fat whipped cream, fresh strawberries or cherries if desired.
